Chicken
with Pomegranates
Place olive oil in a large skillet
over a med-high flame. Season chicken with salt, pepper & brown
the chicken in skillet, about 2 minutes per side. Add the
wine, and let it evaporate for about 10 minutes. Season with
everything but the ginger. Simmer for another 25 minutes, add
the chicken broth about 1/2 c. at a time, over the course
of that time period. when ready to serve, add pomegranate seeds.
Mix in, and cook for an additional 5 minutes, adding a dash
of ginger to the mix just before serving.
Serve with rice.

Ingredients
1
tbsp unsalted butter or ghee
5 tbsp olive oil
salt, pepper, to taste
1-2 c. chicken broth
1c. dry white wine
ground cinnamon
ground nutmeg
ground ginger
seeds from 2 large pomegranates
5-6 boneless chicken breasts
NOTE:
Using
ghee (Indian clarified butter) instead of butter will lower
the fat.
