Honey-Orange Glazed Salmon
With Curried Quinoa

"There is one product called "quinoa" (pronounced "ken-wah" or "kin-o-ah") that is permitted on Passover even for Ashkenazim. Although it resembles a grain, it is technically a grass, and was never included in the prohibition against kitniyot. It is prepared like rice and has a very high protein content. Of course, it needs to be from a closed container that is new for Pesach... "

Preheat oven to 400 [degrees] F. Coat a baking sheet with cooking spray.

Season both sides of salmon with salt and black pepper. In a shallow dish, whisk together orange juice, orange peel, honey and cumin. Add salmon and turn to coat. Transfer salmon to prepared baking sheet and brush on any remaining marinade. Bake 10-12 minutes, until fork-tender.

In medium saucepan, bring broth to a boil. Add quinoa and salt if desired. Reduce heat to low. Cover.

Cook until quinoa is tender and the liquid is absorbed (about 15 minutes). Stir in green onions and carrots in to cook for the last 5 minutes. Remove from heat.

Add curry powder and stir to coat. Fluff with a fork and season with salt and black pepper. Cover and set aside until ready to serve. Serve salmon over quinoa.

 

Ingredients

4 5-oz. salmon fillets
1 orange (1/4 cup juice, 1 tsp. finely grated orange peel)
1 tbsp honey
1/2 tsp ground cumin
2 tsps olive oil
1 tsp curry powder
1/2 c. reduced-sodium
chicken or no-chicken broth
1 1/2c. quinoa
2 green onions, chopped
1/2 c. shredded carrots
Salt and ground black pepper,to taste

Makes 4 servings.
