Passover Chocolate Chip Cookies - Mandlebrot

Chocolate desserts for Passover can't include things like mandelbrot & chocolate chip cookies, can they? This recipe for Passover is both easy to make and delicious.

Beat eggs & sugar together until thick and lemon colored.

Beat in oil & water until blended. Stir in chopped chocolate, nuts, orange peel & salt. Stir in 2 cups of matzos meal until well mixed.

Let batter stand for 10 min. (until thicken as it stands)

Drop batter for cookies, or for madelbrots, lay down in 4 strips (each about 12" x 1.5" wide on baking sheets that have been oiled & slightly dusted with matzo meal.) Smooth with knife to form straight strips.

Bake in moderate oven (375 degrees) about 15-20 min. until a pale golden brown.

Remove from oven and immediately cut each strip into 15 (3/4 in. wide) diagonal slices. (Remove slices from baking sheets & allow to cool) or return to oven to toast & brown for about 5 minutes.

3 eggs

1 c. sugar

1/2 c, vegetable oil or margarine

3 tbsp. water

1 c. chopped semi-sweet chocolate

1/2 c. chopped walnuts

2 tsp. grated orange peel or (1 tbsp juice & 1 tbsp peel) (may subst. lemon instead)

1/4 tsp. salt

2 c. matzoh meal
