Low Fat Passover Brownies

Yummy chocolate desserts for Passover simply must include a chocolate brownie, right? Well, there's no Jewish guilt required for this dessert recipe. This recipe for Passover Brownies is easy to make, low fat, and delicious.

Preheat oven to 350 degrees.

In mixing bowl, beat together yogurt, granulated sugar, vanilla and salt.

Sift cocoa and flour into yogurt mixture. Beat on low speed to blend. Dough will be thick.

Immediately fold in egg whites and gently blend by hand. Don't overmix batter or brownies will be rubbery.

Pour into greased 8 x 8 square pan. Bake at 350 degrees 25-30 minutes or until knife comes out clean when inserted in center of pan.

Cool. Cut into squares, dust with powdered sugar and serve.

 


Ingredients

1 c. nonfat yogurt
1 c. plus 2 tbsp. granulated sugar or sucanat
1 1/4 tsp. pure vanilla extract
dash salt
9 tbsp. unsweetened cocoa
2/3 c. matza cake meal
3 egg whites, beaten to almost stuff peaks
1 tbsp. powdered sugar (for dusting)

Makes 20-25 small brownies.

Sucanat is basically dehydrated sugar cane with little to no processing, making it an excellent source of iron, calcium, vitamin B6, potassium and chromium, which helps balance blood sugar. Malitol is a bit more expensive, but is a little less sweet than actual sugar. What's nice about Sucanat is you can use in a 1:1 ratio wherever you'd use sugar.
