Herbed Quinoa

"There is one product called "quinoa" (pronounced "ken-wah" or "kin-o-ah") that is permitted on Passover even for Ashkenazim. Although it resembles a grain, it is technically a grass, and was never included in the prohibition against kitniyot. It is prepared like rice and has a very high protein content. (It's excellent in "chollent" stew!) You should be able to find it at most health food stores. Of course, it needs to be from a closed container that is new for Pesach... "

In medium saucepan, bring stock to a boil.

Add quinoa and salt if desired. Reduce heat to low. Cover. Cook until quinoa is tender and the liquid is absorbed (about 15 minutes). Remove from heat.

Add chopped herbs and butter. Cover and set aside until ready to serve.


Ingredients

2 1/2 c. vegetable or no-chicken broth

1 1 /2 c. quinoa

3 tbsp chopped fresh herbs (oregano, basil, rosemary, marjoram, thyme, sage would all be good choices)

2 tsp. butter or soy margarine

salt to taste

Makes 6 servings.
