Green Beans
with Citrus
Butter Sauce

Green beans are kosher for Passover if you are following Sephardic traditions (not for Ashkenazic customs) and you'll love them in this recipe because of the citrus sauce. You can cook the beans until they are crisp-tender by boiling them in salted water for about 4 minutes, but I prefer to steam them in the microwave by putting them in a glass baking dish, with a little water on the bottom and cook on HIGH 2-3 minutes (times vary on microwaves, so cook for 2 minutes, then check.)

Heat oil in heavy large skillet over medium high heat. Add orange peel, lemon peel and garlic.

Add broth and simmer one minute. Add butter and beans.

Toss until beans are heated through and sauce coats beans, about 2 minutes. Season with salt & pepper and serve.

1 lb green beans
1 tbsp. olive oil
1 tbsp. grated orange peel
2 tsp. grated lemon peel
2 garlic cloves, minced
1/4 c. canned chicken (or no-chicken broth)

Makes 6 servings.
