Garlicky Spaghetti Squash

This make a tasty and festive vegetable side dish (that has the appearance of noodles) for a Passover seder.

Bring a large pot of water to a boil, drop in the spaghetti squash. Cover and cook over medium heat for 45 minutes or until tender. Cut squash in half cross wise after its cooled 10 min.

OR

Cut squash in half crosswise. Put squash face down in a glass baking dish in 3/4 inch of water, cover with wax paper, and cook in microwave on HIGH for 15 minutes.

Carefully scoop out the seeds from the squash with a spoon.

Over a large bowl, scoop out the "meat" of the squash with a fork. Squash should look sort of like strands of spaghetti. Put squash in a colander and set aside to drain.

Heat olive oil in a large skillet, add garlic, and cook for 2 minutes. Toss in with the squash. Add salt & pepper to taste.




Ingredients

1 medium sized (about 3-1/2 lbs) spaghetti squash

2 tbsp. olive oil plus 4 tbsp olive oil or salted butter

2 large cloves garlic, minced

salt, pepper to taste
