Charoset
Also known as "charoses", charoset
is an essential part of the Jewish celebration of Passover as
it is one of the items on the seder plate and is actually used
as part of the ceremony. Traditionally,
it is some kind of apple
nut mixture made to resemble the mortar used by slaves to build
bricks, yet sweet, so that the person eating it is also reminded
that there is sweetness even after suffering. Keeps
about three days in refrigerator.

About a half hour before the seder,
mix everything together, adding just enough wine to make paste.

1/4 c. almonds, chopped
1/8 c. walnuts, chopped
11/2 tsp. brown sugar
1/8 tsp. cinnamon
1/2c. grated Granny Smith apples (peeled)
1/8 c. dried cranberries (optional)
red Passover wine
